So remember the homemade marshmallow fluff recipe I shared yesterday? I had an ulterior motive for making it. I keep seeing photos all the time of cheesecake stuffed strawberries. Here’s my dirty little secret: I don’t really like cheesecake. So boo, right? I love the concept of it, but a cheesecake filling just wasn’t doing it for me. I wanted to make something fun and yummy that would represent the coming summer. And inspiration struck. Chocolate and strawberries go well together, so why not make a s’mores stuffed strawberry?

S'more stuffed strawberry recipe is easy and a great treat for Memorial Day or any other gathering

As I thought about how to replicate a s’mores filling that I could get into a strawberry, it took awhile to figure out how I wanted to do it. I thought about melting down marshmallows a la Rice Krispie treats, but that didn’t quite fit with what I wanted to do. I wanted something that would be smooth and creamy that would allow you to bite and not pull all the filling out the first time you nibbled on the strawberry (who am I kidding – I’m the only person in my family who doesn’t stuff the whole thing in her mouth and instead takes bites, but still). Finally it hit me that marshmallow fluff would be the idea vehicle for the s’mores filling. And the heavens sang. Truly. I heard them.

The obvious choice (to me) for the chocolate was Nutella, which of course I have in my pantry at all times. And which I used to make a marshmallow fluff s’more yesterday – I highly recommend it. Since Little Miss is dairy free, I had to come up with an alternative for her, and so I chopped bits of dark chocolate finely in place of the Nutella, and I have to admit that it’s pretty awesome whichever way you go.

Making the homemade marshmallow fluff took under a half hour, and the strawberries were super quick, too. I made small batches because they were for taste testing and to send in to teachers. This would be a great party dessert because it’s finger food and so fun and unique. I will be making these for a Memorial Day barbecue for sure. Use not overripe strawberries, and eat them the same day you make them. Strawberries aren’t meant to be prepared and then not eaten – same rule when you make chocolate dipped strawberries.

But really… who thinks these would last anyway?

S’mores Stuffed Strawberry Recipe

Ingredients:
6 large strawberries
1/4 c marshmallow fluff
2 T Nutella*
1 graham cracker, crushed

*Or use 1/4 to 1/2 ounce chopped dark chocolate

Directions:
The recipe for a s’mores stuffed strawberry is so quick and easy. Get your kids to help! In a small baggie, add the graham cracker, and crush it with your fist so that you have graham cracker crumbs. Place the crumbs into a small bowl.

Clean and hull your strawberries. You want to make the inside larger than you normally would when hulling so that it holds more filling.

In a small bowl, add the marshmallow fluff and Nutella (or chopped chocolate), and stir together until marbled.

Using a spoon, add about a teaspoon of filling into each strawberry, letting a little come out the top but not overfilling it (or get fancy, put it in a bag and pipe it).

Steps to make a s'mores stuffed strawberry

Dip the tip of the strawberry into the graham cracker crumbs and gently roll so that all the filling is covered by the crumbs.

Repeat for each s’mores stuffed strawberry, obviously increasing the proportions if you are making for a larger gathering. Refrigerate if not serving within a half hour, and be sure to eat the same day.

Notes

This recipe easily scales up for parties. If you have a dairy allergy or simply prefer, use chopped dark chocolate in place of the Nutella. A quarter to a half ounce is plenty for 6 strawberries.     They are so good, aren’t they? I honestly didn’t have a huge problem with the marshmallow coming out, but I used my homemade marshmallow fluff, so it may be a bit thicker than the store bought stuff (I don’t buy the store bought kind, so I can’t compare). The other tip would be to have the open end raised slightly so gravity works for you instead of against you? Now I want them again!
