We are officially settled in the back to school routine around my house, and with both kids in middle school, it’s a little different. They’re both doing cross country, which I discovered is a 5 day a week practice sport.

By the time the wee ones get home – later than when they were in elementary school thanks to practice – they are hungry. I take that back. They are Hungry with a capital H.

I’ve been putting together all sorts of snacks for them to eat when they get home before dinner, and I realized that this is interrupting my work day (is that a bad mom confession?) with the prep work, so I got creative.

The Goldfish crackers I purchased a couple weeks ago and used to make this Chicago style popcorn mix disappeared.

Needless to say, the wee ones loved it, so I decided to make something else fun to feed my family. How is it that they’re home less but eating more?

I may not create a welcome home snack every day, but I can create a snack mix for them to enjoy. A little upfront work proves I love my kids, right?

Plus, this recipe for white chocolate party mix makes a batch big enough to keep them happy for awhile. It’s a perfect party food, too; no one can stop grabbing some.

Simply point them in the direction of the fruit and serve up a bowl of this. Lucky for my kids, we have kiwi, apples, clementines, prickly pear, bananas, and watermelon for them to devour with this, and I always have plenty of savory treats out at parties.

Plenty of flavors and textures make for a perfect snack. Sweet and salt, crunchy and chewy. They all combine wonderfully in this white chocolate party mix.

This is one of those super easy recipes that you can make in under a half hour and enjoy over the next week or so. While I serve it as an after school snack, this also works great at parties or to bring to other functions.

Fortunately, I typically keep most ingredients on hand in my pantry, so I can whip it up anytime!

How to make white chocolate party mix

In a large bowl, add the Rice Chex, Cheerios, pretzels, dried cranberries, and M&M’s. Stir gently to mix them up.

In a heavy saucepan, heat white chocolate chips over low heat on the stove. Buy good white chocolate, not almond bark.

It makes a difference. Stir regularly as the chocolate melts to ensure it doesn’t burn.

Once it has melted completely, remove from the heat immediately. If it is a little thick and clumpy, add 1/4 to 1/2 teaspoon of vegetable oil and stir. Good quality chocolate is less likely to have this issue.

Add white chocolate to the cereal mix in dollops, stirring with a large spatula between each addition. This helps prevent big chunks of chocolate and helps ensure everything gets coated.

Spritz your counter with a little water, and lay out 4 to 6 sheets of wax paper or parchment paper. The water helps the paper stick and not slide as you spread out the white chocolate party mix. (That’s a super secret tip!)

Wait 10 to 15 minutes for the white chocolate party mix to harden. Test it periodically to see if it’s ready. Nope, not ready yet! Stop taste testing!

When it’s hardened, gently break it up.

Serve immediately or place into a tightly sealed storage tin for up to a week. Note that this is delicious enough that little hands don’t want to wait for all the photos before “testing” it for flavor.

A delicious sweet and salty combination perfect for an after school snack or other occasions. This white chocolate party mix is easy to make and tastes great!

Ingredients

  • 4 cups rice Chex
  • 3 cups Cheerios
  • 2 cups pretzels
  • 2 cups M&Ms
  • 1 1/2 cups dried cranberries
  • 16 ounces white chocolate chips

Instructions

  1. Add rice Chex, Cheerios, pretzels, M&Ms, and cranberries to a large bowl. Stir gently to mix up.
  2. Over low heat in a heavy saucepan, melt white chocolate while stirring frequently. Remove from the heat as soon as the chocolate melts.
  3. Add chocolate to the snack mix in dollops, stirring between each addition to ensure it is evenly dispersed.
  4. Place 4-6 sheets of wax paper on a work surface. Pour mix onto paper, and use a spatula to gently push into a thin layer.
  5. Let harden 10-15 minutes. Break into small chunks once hardened.
  6. Serve immediately or store on the counter in a tightly sealed container for up to a week.

Notes

  • Use high quality white chocolate, not almond bark. It makes a big difference in taste. If your chocolate is too thick when melted, add 1/4 to 1/2 teaspoon of oil and stir again. High quality chocolate tends to not have this issue.
  • To keep your wax paper from sliding as you spread out the mix, spritz your work surface lightly with water before laying down the wax paper. This helps hold them in place.

    Can I use raisins in Chex mix with white chocolate?

      You certainly can – when you make something, make it your own! The only caution I would use is that raisins are already fairly sweet (more so than dried cranberries), so you may want to use fewer of them than you would cranberries or add some extra Cheerios or Chex to balance out the sweetness a little!
