Chimichurri Pizza – Tasty Tuesday!

A couple weeks ago, I made an amazing churrasco with chimichurri inspired by our vacation to Puerto Rico.  It was delicious and everyone had seconds, including the wee ones.  They took some in their lunch the next day, too.  But I still had more left over.  Considering that I was pretty much eating the chimichurri the way some people eat chocolate, I knew I had to use it quickly.  And pizza spoke to me.  Why not make a chimichurri pizza?

Pizzas are such a forgiving dish.  I’ve made regular pizzas, grilled pizzas, s’mores pizzas, smoked salmon pizzaspotato pizzas, goat cheese asparagus pizzas, and more.  Why not do a chimichurri pizza? Just because I’d never heard of it didn’t mean it wouldn’t be good.  Oh, was I right about that.  This is definitely going on the keeper list!  In fact, I just might make churrasco solely for the joy of making chimichurri pizza again.

Chimichurri pizza recipe

Chimichurri Pizza

Ingredients:
1 recipe pizza dough*
1/2 c chimichurri sauce
3/4 c churrasco
1 1/2 c mozzarella cheese
Cornmeal

*Making pizza dough is super easy.  If you don’t have time or aren’t comfortable with it, most stores now have refrigerated pizza dough that you can use.  Either whole wheat or “regular” dough will work just fine.

Directions:
Preheat your oven to 450 degrees.  If you have a pizza stone, make sure it’s in your oven.

Make your pizza dough, either using your own recipe or store bought.  Roll it into a round that will fit your pizza stone or baking pan, sprinkling flour on your work surface and the dough as necessary to keep it from sticking.

Sprinkle the pan or pizza peel (if you’re using a stone) with cornmeal.  Carefully place the pizza dough onto the peel or baking dish.  Add the chimichurri sauce and spread it gently with the back of a large spoon.  Top with the mozzarella.

Slice the churrasco into bite size pieces.  Each thin slice from your original churrasco usually makes three pieces to be used for your pizza.  Note that all measurements are approximate and can be altered to your specific preferences.

Cut up your churrasco into bite size pieces

Place the pizza in the oven for 10-12 minutes, until the mozzarella is a beautiful golden brown.  If you are using leftover churrasco that is cold, add it to the top of your pizza about five minutes into the baking, just strewing it across the top of the pizza.  If your churrasco is just cooked and still warm, simply add it to your pizza once it’s finished baking.

Slice and enjoy while it’s still hot!  Are you a square slicer or a triangle pizza eater?

This unique pizza has a delicious herbed chimichurri base and fantastic marinated meat, as well. It's a perfect use for leftover churrasco, too!

Ingredients

Notes
